The secret behind this dish lies in the method my wife learned growing up in Spain, with the amazing flavor added from the Spanish chorizo. Ingredients:

4 handfuls of washed brown lentil

1 medium green pepper, halved and seeded

1-2 tomatoes, halved

1 large onion, peeled and halved

1-2 carrots, halved

1 potato, halved

2 pieces of Spanish chorizo

2 Bay leaves

Salt and pepper to taste

Roux Preparation:

1 small diced onion

1 tbsp sweet Spanish paprika

1 tbsp flour

Pinch of salt

Butter or olive oil for frying

Instructions:

  1. Prep your lentils and vegetables: First, wash your lentils and prepare vegetables as instructed above.
  2. Combine the ingredients: Next, toss the lentils, vegetables, chorizo, Bay leaves, and salt in a pot. Cover with cold water and bring up to a boil on medium-high heat.
  3. Create the roux: Then, sauté diced onion, add paprika and flour to create the roux.
  4. Add the roux: Finally, add the roux mixture to the pot and simmer until lentils are soft and vegetables tender, about 30 minutes or so
